Melt-in-the-mouth carrot and comté patties
Carrot & comté patties: yogurt & honey sauce 🥕🍯
Ingredients for 7/8 patties:
- 3 carrots
- 1/2 onion
- 1 egg
- 80g flour (or 8 tablespoons)
- 1 handful Comté cheese, grated
- Salt, pepper and the spices of your choice: curry, paprika, cumin....
For the sauce :
- 1 tsp mustard
- 80g yoghurt, fromage blanc or Greek yoghurt
- 1 tablespoon honey
- Salt, pepper, a little Espelette pepper (or other aromatic herbs or spices: oregano, herbes de Provence, curry...)
Recipe for the galettes :
1) Grate carrots and chop onion
2) Mix the carrots and onion with the egg, flour, grated comté cheese and spices (salt, pepper...).
3) Cook for 3-4min in a pre-oiled frying pan.
Food balance:
To balance these patties, accompany them:
🥗with a salad of lentils, crudités & some oleaginous fruit
🍳with 2 fried eggs and a small salad on the side
🐟with tuna or other oily fish that you add to the sauce by crumbling it + crudités on the side
