Quick recipe for creamy butternut and boursin orzo
Orzo with butternut & boursin cream 🍝🍂🎃
Ingredients for 3 people:
- 300g pasta (in this case orzo)
- 200g butternut (for faster processing, use frozen pumpkin)
- 1 80g boursin cheese
- 2 tablespoons Greek yogurt or fromage blanc
- 50ml water
- 1/2 red onion
- Salt, pepper, curry & herbes de Provence
- Protein of your choice: chicken, turkey, salmon, chickpeas, tofu...
Recipe:
1) Mince 1/2 red onion and cut butternut into small pieces (it cooks faster!).
2) Cook pasta according to package directions.
3) In an oiled frying pan, brown the onion with the butternut and boursin.
4) After 5 min, add a little water and the Greek yogurt. Season and cook for a further 5/10 min, stirring regularly.
5) When the butternut pieces are cooked, blend in a blender. Keep a few pieces of butternut aside to provide more fiber for a more "filling" dish.
6) In the same pan, cook the protein of your choice.
7) Pour the butternut cream into the pan with the chicken, then add the pasta and it's ready! 😋
